How to Cook Squid.
- Fried:
- Cut the mantles into rings. Leave the tentacles whole.
- Soak in buttermilk for twenty minutes.
- Coat rings and tentacles with seasoned (at least well-peppered) flour.
- Fry with olive oil for two to three minutes, until cooked but tender.
- Let drain on paper towel.
- Squeeze lemon juice onto squid.
- Enjoy with linguine, properly adorned.
- Boiled:
- Split the mantles along the seams.
- Score the inside of the mantle at 30° with ½-inch separation.
- Cut the mantle lengthwise into ½-inch strips.
- Boil for two to three minutes, until cooked but tender.
- Serve chilled with somen, accented with lemongrass, sesame oil, and bird's-eye pepper.
- Neither:
- Follow recipe for boiled, except:
- Cut into thin strips.
- Do not boil.
