How to Cook Squid.

Fried:
  1. Cut the mantles into rings. Leave the tentacles whole.
  2. Soak in buttermilk for twenty minutes.
  3. Coat rings and tentacles with seasoned (at least well-peppered) flour.
  4. Fry with olive oil for two to three minutes, until cooked but tender.
  5. Let drain on paper towel.
  6. Squeeze lemon juice onto squid.
  7. Enjoy with linguine, properly adorned.
Boiled:
  1. Split the mantles along the seams.
  2. Score the inside of the mantle at 30° with ½-inch separation.
  3. Cut the mantle lengthwise into ½-inch strips.
  4. Boil for two to three minutes, until cooked but tender.
  5. Serve chilled with somen, accented with lemongrass, sesame oil, and bird's-eye pepper.
